Blackened Cajun Salmon Tacos with Mango Guacamole

Spicy blackened salmon meets sweet mango guacamole in this delicious salmon taco. These Blackened Cajun Salmon Tacos with Mango Guacamole have quickly become my favourite meal to serve when friends come over.

Blackened Salmon Ingredients

  • 4 salmon fillets about 1 1/4 pounds, cut into 1 inch cubes
  • 2 tablespoons avocado oil
  • 1 teaspoon cayenne
  • 1 tablespoon garlic powder
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 2 teaspoons paprika
  • 1 teaspoon cumin
  • 2 teaspoons onion powder
  • 1/4 tsp black pepper
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon coconut sugar (feel free to sub brown sugar)

Ingredients for Mango Guacamole

  • 1 large avocado, mashed
  • 1 large Alphonso mango diced
  • 1/8 cup fresh cilantro, chopped
  • 1/3 cup green onions, sliced
  • 1 jalapeño chili, seeds and ribs removed and finely chopped
  • salt and pepper to taste
  • 1 lime, juiced

Taco and Garnish Ingredients

  • gluten-free tortillas (I used Siete Foods brand), I like to heat them up before serving
  • 1 lime cut into wedges
  • handful chopped cilantro
  • hot sauce ( I like Siete Foods brand, Habanero Sauce)
  • 1 container pico de gallo, store prepared (I like Mad Mexican brand)
  • 1 recipe prepared, The Best Coleslaw

Step 1: Instructions for the Cajun Seasoning

In a large bowl, mix the spices for the cajun seasoning. Add the cubed salmon and mix to combine and set aside.

In a large frying pan heat the avocado oil over medium high heat. Working in batches, add the salmon and cook for about 5 minutes each side. Be careful to not overcrowd your pan or the salmon will not become crispy.

Step 2: Instructions for the Mango Guacamole

In a medium size bowl, add the ingredients for the guacamole. Mix until well combined. I like to chill mine in the fridge until we are ready to eat.

Step 3: Instructions for Assembling the Tacos

Place a serving of coleslaw in the bottom of each taco. Add a serving of salmon and top with a generous serving of guacamole, pico de gallo, and cilantro. Serve with a hot sauce and a lime wedge. Enjoy!
