Caponata with Air Fried Tofu

Caponata with Air Fried Tofu

This beautiful Sicilian dish is often served as an appetizer but by adding Air Fried Tofu and brown rice it becomes a quick and delicious meal packed with veggies, protein and whole grains.


Squash

Caponata Ingredients

  • 1-2 tablespoons of olive oil
  • ½ large onion
  • 3 cloves of garlic
  • 1 orange Pepper
  • ½ large eggplant
  • 1 small summer squash
  • 1 can of peeled diced Italian tomatoes
  • 2 sprigs of thyme
  • 2 small zucchini
  • ¼ cup raisins
  • 2 tbsp capers
  • 1 tablespoon coconut sugar

Tofu Ingredients

  • 1 package extra firm tofu
  • 1 tablespoon olive oil
  • 1 tablespoon Italian seasoning

Garnish Ingredients

  • 4 cups cooked brown rice
  • fresh basil, sliced

Step 1: Instructions for the Caponata

In a large pot or dutch oven, heat the oil over medium heat. Add the onion, garlic, orange pepper, eggplant, zucchini and summer squash and cook until tender around 5-7 minutes. Stir in the tomato and thyme. Cook for 20 minutes, stirring occasionally.

Step 2: Instructions for the Tofu

Place the tofu block between 2 pieces of paper towels and press to absorb extra water. Keep pressing until no more water comes out. Cut tofu into cubes. Drizzle with olive oil and Italian seasoning.

Transfer the tofu to the air fryer in a single layer and cook for 10 to 12 minutes, shaking the basket halfway until slightly golden and crisp on the outside and tender on the inside.

Step 3: Instructions for Serving

Fill bowls with ½ cup brown rice, top with a serving of caponata and tofu and sprinkle with fresh basil. Enjoy!
