Cauliflower and Lentil Tacos with Avocado-Cilantro Dressing

You are going to love these Vegetarian Tacos. Roasted Cauliflower, spicy lentils with a creamy avocado-cilantro dressing combine to make this delicious taco. Try it for your next Taco Tuesday!

Taco Ingredients

  • 1 large head of cauliflower, cut into small florets
  • 2 plus 1 tablespoons olive oil
  • 1 plus 1 teaspoons cumin
  • 1 plus 1 tablespoon chili powder
  • 1 tablespoon orange zest
  • 2 tablespoons orange juice
  • 1 date, very finely diced
  • 1 cups white onions, chopped
  • 2 plus 1 cloves garlic, minced
  • 5 tablespoons tomato paste
  • 1 cup of vegetable broth or water
  • 2 cans lentils, drained and rinsed
  • 20 small corn tortillas
  • 1¼ cups cilantro, chopped
  • 1 lime, cut into wedges

Avocado-Cilantro Ingredients

  • ½ cup mayonnaise
  • ½ avocado
  • 2 tablespoons lime juice
  • freshly ground black pepper, to taste

Step 1: Instructions for Roasting the Cauliflower

Preheat the oven to 425 degrees F.

Place the cauliflower in a large bowl and drizzle with 2 tablespoons of olive oil. Add the cumin, chili powder, orange zest, orange juice and date and toss to coat.

Place the cauliflower on a baking sheet lined with parchment paper. Roast for 30 to 35 minutes, tossing halfway, until the cauliflower is starting to turn golden.

Step 2: Instructions for the Taco Filling

Heat the olive oil in a medium size frying pan over medium high heat. Add the onion, garlic, salt and pepper and cook, stirring occasionally until tender, about 5 minutes. Add 1 teaspoon of cumin and 1 tablespoon of chili powder, stir until fragrant. Add the tomato paste and stir. Stir in the lentils and broth simmer for about 20 minutes. Add the cauliflower, being careful not to over mix or it will break into pieces.

Step 3: Instructions for the Avocado-Cilantro Dressing

Mix the mayo, avocado, lime juice, garlic, cilantro, salt and pepper to a blender and mix until well combined.

Step 4: Instructions for Serving

To assemble the tacos, add the cauliflower, lentil mixture to a soft or hard taco shell and drizzle with the dressing, a squeeze of lime and cilantro. Enjoy!
