Chia Pudding
I am always looking for a way to get more chia seeds into my everyday diet. They are loaded with anti-oxidants and they are a source of protein. I like to make a big batch of this pudding and store it in mason jars in the fridge for a quick and easy breakfast or snack. Did you know you can also store extra jars in the freezer?
Pudding Ingredients
- 2 cup your favourite non-dairy milk, I use unsweetened almond milk
- 8 tablespoons black chia seeds
- your favourite sweetener, I find that I don’t need to sweeten it (maple syrup, honey, stevia, monk fruit)
- 1 recipe of my Berry Compote
Topping Ingredients
- fresh berries
- granola
- chopped mint
- grated coconut
Step 1: Instructions for Pudding
In a medium size bowl mix the chia seeds, almond milk and sweetener if you are using it. Stir with a spoon until well combined.
Step 2: Instructions for Assembling
Spoon a couple of spoons of the berry compote into the bottom of four mason jars. Pour the chia pudding on top of the compote, place the lids on the jars and put in the fridge for a couple of hours or even overnight.
Step 4: Instructions for Serving
Take the lids off the jars and top with your favourite toppings. Enjoy!
