Chicken Stew with Gnocchi

Chicken Stew with Gnocchi

This Chicken Stew with Gnocchi is my version of chicken and dumplings. By using prepared gnocchi and my Instant Pot, this family favourite is a 30 minute meal. Don’t have an Instant Pot don’t worry, I have included a traditional stove top cooking method, but it may take a little longer than 30 minutes to prep. Don’t forget to buy gluten free gnocchi, if you are gluten sensitive.

Stew Ingredients

  • 1-2 tablespoons extra virgin olive oil
  • ½ cup parsley, chopped more for garnish
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 3 medium carrots, peeled and chopped
  • 3 celery stalks, trimmed and chopped
  • Salt and pepper to taste
  • 1 large bay leave
  • 3 sprigs thyme
  • 1 tablespoon poultry seasoning
  • 2-4 cups chicken broth
  • 4 chicken breasts, boneless skinless
  • 1 tablespoons arrowroot
  • 4 servings of packaged gnocchi, prepared

Step 1: Instructions for the Instantpot

Set Instant Pot to saute and add oil, when hot add onion, garlic, carrots, celery, salt and pepper. Saute for about 5 minutes or until veggies are tender and fragrant. Add bay leaf, thyme, parsley, poultry seasoning and stir. Pour in broth and nestle the chicken breast in the broth and vegetables. Secure lid and pressure valve. Cook on manual high pressure for 8 minutes, naturally release the pressure or if in a hurry manually release.

Step 2: Instructions for Finishing the Stew

Remove chicken breast from the pot, shred the meat and return to the pot. Return the Instant Pot to saute. If the stew looks dry add another 1-2 cups of broth. Add 1 tablespoon of arrowroot to a mug with ½ cup of broth. Stir until well combined. Add the slurry to the stew and stir to avoid clumping. Continue to simmer uncovered for 5 minutes, stirring occasionally so the stew does not burn. Remove the thyme sprigs and bay leaf. Taste and adjust seasoning. Add the prepared gnocchi to the Instant Pot and serve immediately. Top with chopped parsley.

Don’t have an Instant Pot, don’t worry. This stew cooks beautifully on the stovetop.

###Step 1: Instructions for Stove Top – Browning the Chicken Cut the chicken into 1 inch pieces. Brown the chicken in a large pot with 1-2 tablespoons of extra virgin olive oil. Remove from the pot and set aside.

Step 2: Instructions for Sauteing the Vegetables

Add olive oil to a dutch oven or a medium heavy bottomed pot. When hot add onion, garlic, carrots, celery. Season with salt and pepper and cook until vegetables are tender, about 5 minutes. Add bay leaf, thyme, parsley, poultry seasoning and stir.

Step 3: Instructions for Bringing the Stew Together

Add the browned chicken and 2 cups of chicken broth. Bring to a boil, reduce heat and simmer covered for 30 minutes. Mix together the arrowroot and ½ cup broth. Add to the pot and simmer for an additional 10 minutes uncovered. Add the prepared gnocchi and serve immediately. Enjoy!
