Tilapia with Fresh Herbs and Lemon

This is my favourite way to prepare fish. It is fast, easy and delicious. In this recipe, the fresh herbs mix with the lemon and oil, as it roasts in the oven creating a beautiful sauce. I used tilapia and parsley in this recipe but you could really use any fish or fresh herb. I have tried it with trout and tarragon, cod and fennel, salmon and thyme, whitefish and basil, the options really are endless.

Ingredients

  • 1-2 pounds tilapia
  • ¼ cup extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 cup fresh flat leaf parsley, chopped
  • 1 tablespoons capers, chopped
  • 1 lemon, sliced
  • Salt and pepper

Instructions

Preheat the oven to 400 degrees F.

Line a baking sheet with parchment.

Rinse and pat dry the tilapia. Season both sides of the fish with salt and pepper. Place on the baking sheet.

Combine the olive oil, garlic, parsley and capers in a medium bowl, stir to combine and pour over fish and evenly distribute the lemon slices.

Place the fish in the oven and bake for 10-12 minutes until the fish is opaque. Be careful to not over cook.

Divide the fish between your plates and top with the juices from the pan. Serve with my Perfect Roast Potatoes and a green salad. Enjoy!
