Cod with Tomatoes, Capers and Olives

I have been making a version of this recipes for over 20 years! It was one of the first recipes I made as a newly wed. Over the years, I have tweaked it until it really has become my own. It is fast, delicious and extremely nourishing. The tomatoes actually burst with flavour in your mouth as you bite into them. I like to serve this with my Perfect Roast Potatoes and sautéed spinach.


Squash

Ingredients:

  • ¼ cup extra virgin olive oil
  • 4 garlic cloves, minced
  • 2 shallots, roughly chopped
  • ¼ cup chopped parsley
  • 3 tablespoons capers
  • ¼ cup green olives
  • Salt and pepper to taste
  • 4 fillets of cod

Instructions:

  1. Preheat the oven to 425 degrees f.
  2. In a large baking dish, toss together the olive oil, garlic, shallots, cappers, olives, salt and pepper. Nestle the cod fillets between the tomatoes, olives and capers.
  3. Bake for 8-10 minutes or until the fish is opaque.

I like to serve this with my Perfect Roast Potatoes and sautéed Spinach. Enjoy!
