
Disappearing Apple Muffins
It seems these muffins must be magical, because every time I make them they seem to disappear before the end of the day. I like to make them in the fall when apples are in season. They make for a great after school snack.
Apple Muffin Ingredients
- 1 cup store bought unsweetened applesauce or my Pink Apple Sauce
- ½ cup coconut sugar
- 2 large eggs
- ¼ cup melted coconut oil
- 2 tsp pure vanilla extract
- 1½ tsp ground cinnamon
- ¼ tsp salt
- 1 ½ cups almond flour
- 1 cup oats
- 2 tsp baking powder
- ½ tsp baking soda
Crumble Topping Ingredients
- ¼ cup melted coconut oil
- ½ cup oats
- 1 tsp cinnamon
- 2 tbsp coconut sugar
Step 1: Instructions for the Muffin Batter
Preheat the oven to 350 degrees F.
Line a muffin tin with muffin liners, grease the liners with a non-stick cooking spray.
In a large mixing bowl, combine the apple sauce, diced apple, coconut sugar, eggs, coconut oil and vanilla extract. Mix until well combined.
Next, add in the cinnamon, salt, almond flour, oats, baking powder and baking soda. Stir until just combined.
Step 2: Instructions for the Crumble Top
In a small bowl, mix all of the ingredients for the crumble topping.
Step 3: Instructions for Baking the Muffins
Evenly distribute the batter into 12 muffin cups, about ½ full. Sprinkle each muffin with some of the crumble.
Transfer to the preheated oven and bake until a toothpick inserted comes out clean, about 15-18 minutes.
