
Grain Free "Sugar" Cookies
When it comes to the holidays, I love to indulge in all of the things that make it special: family, slowing down and of course all of the baking! But inevitably the new year roles around and I am left with headaches, joint pain and severe bloating. Last holiday season, I decided enough was enough and I came up with this recipe for "sugar" cookies. So when the family gathered to slow down, I could indulge in my own baking and not live to regret it in January.
Cookie Ingredients
- ¼ cup melted coconut oil
- ⅓ cup coconut sugar
- 1 tsp vanilla extract
- 1 large egg
- 2 cups almond flour
- ¼ cup coconut flour
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- Tapioca flour
Step 1: Instructions for Mixing the Dough
In the bowl of a stand mixer cream the melted coconut oil and coconut sugar. Add the eggs and vanilla and mix until combined.
Sift the almond flour, coconut flour, baking soda and salt into a medium bowl. Stir in the sifted ingredients until it forms a ball. Form the ball into a disc and cover with plastic wrap and refrigerate for at least 30 minutes.
Step 2: Instructions for Rolling out the Cookies
Preheat the oven to 350 degrees f.
Line a baking sheet with parchment paper. Dust your counter and rolling pin with tapioca flour. Roll the dough into a ½ inch thickness and use your favorite cookie cutters to make shapes.
Step 3: Instructions for Baking the Cookies
Place on the parchment paper and bake for 8-10 minutes. I like to give them a light dusting of sprinkles to make them feel more festive. Enjoy with your favourite warm drink, in front of the fire and Christmas Tree with your favourite loved ones!
