Grandma Lucy’s Yorkshire Puddings

My grandma Lucy made the best Yorkshire Puddings! Her secret, double the eggs of any recipe. This holiday season I worked on cleaning her recipe up a bit. To keep them vegetarian and a bit healthier, I use avocado oil instead of animal drippings or vegetable oil.

Ingredients

  • 6 large eggs, at room temperature
  • ¾ cup whole milk
  • 2 tablespoons water
  • ¾ cup all purpose flour
  • 1 tsp salt
  • avocado oil

Step 1: Instructions for the Mixing the Batter

In the bowl of an electric mixer whisk the eggs, milk, water, flour and salt until it forms a smooth batter. Do not over beat. Pour the batter in a large pitcher and place in the fridge overnight to rest.

Step 2: Instructions for Baking

Preheat the oven to 425 f. Add a tiny splash of avocado oil into each of the 12 compartments of a muffin tin and place in a preheated oven for 5 minutes until smoking hot. Carefully take the tray out of the oven and pour the batter into the hot oil. Place the muffin tray in the middle of the oven and bake for 20-25 minutes until the batter has quadrupled in size. DO NOT OPEN THE OVEN WHILE BAKING. This will cause the puddings to fall.

Step 3: Instructions for Serving

Remove from the oven and tray and serve immediately with roast beef or My Nut Loaf and green beans. Enjoy!
