Grilled Cheese with Tomatoes and Pesto

I love making this sandwich for a delicious, fast lunch in the summer when the tomatoes and basil are fresh and plentiful. This soups pairs beautifully with my Minestrone Soup.

Sandwich Ingredients

  • 1 tablespoon butter
  • 1 ball fresh mozzarella, cut into slices
  • 1 tomato, thinly sliced
  • 1 tablespoon pesto
  • 2 pieces whole grain bread

Instructions for Grilling the Sandwich

Heat a frying pan over medium high heat. To assemble the sandwich, generously butter one side of a slice of bread. Place bread butter-side-down onto the skillet bottom and layer the pesto, mozzarella and tomato. Butter a second slice of bread on one side and place butter-side-up on top of the sandwich. Grill until lightly browned and flip over; continue grilling until cheese is melted.
