Kale Super Food Salad

So what is a super food anyway? I created this salad after reading Darin Olien’s book SuperLife. In his book he explains, "A superfood” as a food that has more nutrients (antioxidants, phytonutrients, vitamins, and minerals) for your body when compared calorie for calorie with another food." I knew that I wanted to eat more nutritional yeast and hemp hearts as I believed they were a super food. So I added a few more superfoods (goji berries, cranberries and kale) and came up with this delicious salad.


Squash

Salad Ingredients

  • 4 cups kale, washed, torn off stems and cut into ribbons
  • 2 tablespoons goji berries, dried
  • 2 tablespoons dried cranberries, sweetened with fruit juice
  • 1 apple, diced
  • 4 radishes sliced
  • 2 tablespoons slivered almonds, toasted
  • 1 tablespoon nutritional yeast
  • 2 tablespoons hemp hearts

Dressing Ingredients

  • maple syrup
  • olive oil
  • rice wine vinegar
  • salt and pepper to taste

Step 1: Instructions for Massaging the Kale

Place the kale in a large bowl, add 1 tablespoon olive oil and a sprinkle of salt. Gently massage the kale by scrunching it into your hands. Repeat until the kale is darker in colour and tender.

Step 2: Instructions for the Dressing

In a mason jar, add equal parts maple syrup, olive oil and rice wine vinegar. Make sure the lid is on tight and shake.

Step 3: Instructions for Assembling the Salad

Sprinkle the goji berries, cranberries, apple, radishes, almonds, nutritional yeast and hemp hearts. Drizzle the dressing over top of the salad and toss. Add salt and pepper to taste. Serve alongside your favourite entree or serve as a first course. Enjoy!
