Late Summer Warm Vegetable Salad

Late Summer Warm Vegetable Salad

There is a farm stall around the corner from our cottage and what they lack in variety, they make up for in fresh produce. They always have potatoes, corn, zucchini, peas and field tomatoes. I created this dish after a trip to the farm stall in last August.


Squash

Salad Ingredients

  • extra virgin olive oil
  • ½ red onion, chopped
  • 2 cloves garlic, minced
  • 2 large field tomatoes
  • 1 zucchini, chopped
  • 1 red pepper, chopped
  • 2 ears of corn, shucked and cut off cob
  • 1 cup fresh peas
  • 2 large handfuls, fresh basil, thinly sliced
  • ¼ pound small new potatoes, cut in half
  • 4 tablespoons feta

Step 1: Instructions for the Potatoes

Boil the potatoes in salted water until fork tender. Drain and set aside.

Step 2: Instructions for the Warm Veggies

In a large frying pan heat the oil over medium high heat.

Add the onions and saute for five minutes until softened. Add the garlic and cook for another minute. Add the tomatoes, zucchini, pepper and cook for another five minutes, stirring occasionally. Add the corn, peas, salt and pepper and cook for another few minutes, careful not to over cook.

Step 3: Instructions for Assembling the Salad

Remove from heat, add the potatoes, basil and feta and toss until well combined. Enjoy!
