
Leftover Berry Compote
Do you every buy too many berries and by the end of the week they turn to mush? This berry compote turns leftover mushy berries into a delicious dish. I like to use this compote in chia pudding, as a fresh jam or as a quick dessert topped with granola.
Ingredients
- 2 cups left over mushy berries
- 1/2 cup coconut water or your favourite juice
- 2 tablespoons coconut sugar or maple syrup
Instructions for the Berry Compote
Add leftover mushy berries to a pan with the coconut water or juice and the coconut sugar. Bring to a boil over medium heat, stirring occasionally.
Berries tend to burn if left unattended, watch carefully.
When the berries have thickened, remove from the heat and let cool.
I like to keep mine in a mason jar in the fridge to use over the next few days. Enjoy!
