Miso Ginger Wild Rice Salad

This Miso Ginger Wild Rice Salad is the perfect combination of crunchy vegetables, nutty flavour from the wild rice and the tangy sweetness from the miso ginger dressing. This is a great side dish but if I am eating as a meal, I like to add sone lentils. Make it the day before, it is even better the second day!


Squash

Dressing Ingredients

  • 3 tbsp rice vinegar
  • 2 tsp miso
  • 2 tbsp coconut aminos
  • 1 tsp chili paste
  • 1 inch fresh ginger, grated
  • 1 cloves garlic, minced
  • 1 tbsp toasted sesame oil

Salad Ingredients

  • 3 cups wild rice, cooked and cooled
  • 3 tbsp green onion, sliced on the bias
  • 1 cup shredded carrot
  • 1½ cup shredded purple cabbage
  • 4 tbsp fresh cilantro, chopped

Garnish Ingredients

  • 3 tbsp toasted sesame seeds
  • lime wedges, for serving

Step 1: Instructions for the Dressing

In a jar with a lid, add the vinegar, miso, coconut aminos, chili paste, ginger, and garlic, and sesame oil. Shake until well combined.

Step 2: Instructions for the Salad

Add the rice, green onions, carrots, cabbage, cilantro and half of the sesame seeds to a large salad bowl. Add the dressing and toss.

Step 3: To Serve

Sprinkle the remaining sesame seeds and more chopped cilantro and serve. Enjoy!
