Pan-Fried Sea Bass with Olive Oil and Herbs

My favourite fish is definitely Sea Bass. It’s high fat content keeps it moist during cooking and it is so rich and tender. This fish literally melts in your mouth. I like to keep the flavours and ingredients simple but very fresh for this splurge worthy fish.

Ingredients

  • Extra virgin olive oil
  • 2 pounds Sea Bass
  • 2 cloves garlic, minced
  • ½ cup white wine
  • 1 cup fresh flat leaf parsley, chopped
  • 1 lemon, sliced
  • Salt and pepper

Step 1: Instructions for Preparing the Ingredients for the Fish

Preheat the oven to 450 degrees F (you may not need to finish sea bass in the oven it will depend on its thickness).

Combine the 2 tablespoons olive oil, garlic and parsley in a medium bowl, stir to combine and set aside.

Rinse and pat dry the cod. Season both sides of the fish with salt and pepper.

Step 2: Instructions for Pan-Frying the Fish

Over medium high heat, heat 2 tablespoons of olive oil in a cast iron pan. Add your sea bass and sear each side for about 3 minutes or until golden. Add the wine and let deglaze and reduce by half.

Pour the lemon olive oil mixture over the fish and place lemon slices on top.

Step 3: Instructions for Finishing the Fish in the Oven

Place the fish in the oven and bake for 5 minutes until the fish is opaque. Be careful to not over cook. Enjoy!

NOTE: My Fish was very thick, at least 2 inches. I needed to bake it for about 8 minutes. If you have a thinner piece of fish, less than 1 inch you may not need to finish it in the oven.
