Perfect Roast Potatoes

These Perfect Roast Potatoes are crispy and salty on the outside and fluffy and creamy inside, a perfect combination. I make these potatoes at least once a week. They are the perfect side for my Cod with Tomatoes and Caper or my Pan-Fried Sea Bass with Olive oil and Herbs. I like to make extra potatoes and heat them up with my eggs and kale the next morning.

Potato Ingredients

  • 3 pounds Yukon potatoes, peeled and chopped into 1inch cubes
  • 2 tablespoon extra virgin olive oil
  • 2 tablespoons unsalted butter
  • 2 tablespoons steak spice
  • 1 handful of chopped fresh herbs (parsley, sage, cilantro, basil or thyme)

Step 1: Instructions for Parboiling

Place a baking sheet in the oven and preheat to 350 degrees f.

Bring a large pot of salted water to a boil over high heat. Add the potatoes to the salted boiling water and turn down to a rapid simmer. Parboil the potatoes for 15 minutes.

Drain in a colander and place the potatoes back into the warm pot. Add the olive oil, butter and steak spice. Stir the potatoes with a wooden spoon until the butter melts.

Step 2: Instructions for Roasting the Potatoes

Carefully take out the hot pan and add the potatoes to the hot pan and spread in an even layer.

Roast the potatoes for about an 30-45 minutes. Checking and turning them every 15 minutes.

Step 3: Instructions for Serving

Place roasted potatoes in a bowl and toss with the fresh herbs. Serve along side with your favourite entree. Enjoy!
