Salmon with Almond Flour Herb Crust
A simple yet thoroughly impressive and satisfying salmon dish! The salmon fillets are coated in almond flour, panko breadcrumbs and herb crust. Easy enough for a weeknight, yet fitting enough for a holiday. We served this for our Easter dinner this year.
Ingredients for the Salmon:
- 4 salmon, fillets
- 2½ tablespoons Dijon mustard
- ⅓ cup almond flour
- ⅓ cup panko breadcrumbs (I use gluten free)
- 2½ tablespoons olive oil
- 1 tsp sea salt
- 1 tsp ground black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp oregano, dried
- 2 tablespoons parsley, minced
- 1 teaspoon lemon zest
- fresh basil
Step 1: Instructions for the Almond Flour Crust
Preheat the oven to 400 degrees f.
In a medium bowl, combine the almond flour, breadcrumbs, olive oil, garlic, onion, oregano, parsley, lemon zest and salt and pepper. Using a fork, toss the ingredients until well combined.
Step 2: Instruction for the Salmon
Line a baking sheet with parchment paper. Place salmon on the parchment paper. Brush 1 teaspoon of Dijon mustard on top of each salmon filet. Top the salmon with the almond flour mixture to form a thin layer.
Step 3: Instruction for Baking
Bake at 400 in the oven for 15 minutes. Remove from the oven and plate with a wedge of lemon. Serve with a side salad or your favourite veggie dish. Enjoy!
