
Sesame Slaw
This slaw quickly became our go to side during long, hot, lazy days at the cottage. On days when I am really short on time, I buy a bag of coleslaw mix and just make the dressing. I love this slaw with my Salmon Burgers or Crispy Air Fried Tofu. This slaw keeps in the fridge for 3-5 days and only gets better.
Slaw Ingredients
- ⅓ head green cabbage, thinly sliced
- 2 medium carrots, cut into matchsticks
- 1 medium red pepper, cut into matchsticks
- ¼ cup toasted, slivered almonds
- 1 can mandarin oranges packed in juice, no sugar added
- ½ cup diced fresh or frozen mango
Sesame Dressing Ingredients
- 3 tablespoons minced shallots
- 3 tablespoons olive oil
- 4 tablespoons Dijon
- 4 tablespoons lemon juice
Slaw Toppings
- 3 green onions, sliced
- 3 tablespoons toasted sesame seeds
- 3 tablespoons toasted slivered almonds
Step 1: Instructions for the Dressing
To make the dressing, combine the sesame oil, coconut aminos, almond butter, fish sauce, garlic, ginger, rice wine vinegar, lime juice and mandarin orange juice in a blender and blend. With the blender running on low speed, slowly add the olive oil through the whole in the lid until the oil is combined and the dressing is thick.
Step 2: Instructions for the Slaw
In a large bowl, combine the slaw ingredients.
Step 3: Instructions for Assembling Slaw
Drizzle the dressing on the salad and toss to combine. Serve with your favourite protein or my Salmon Burgers. Enjoy!
