
TikTok Pasta
Early this year, it seemed everyone was trying this addictive feta tomato dish made viral on TikTok. The creamy feta mixes with the roast tomatoes to make a rose sauce. I couldn’t wait to try this dish and put my own spin on it. Of course I had to find a way to add more protein, so I threw in a can of lentils, my family just loved it!
Roast Tomato Feta Ingredients
- 1 can of lentils
- 1 brick of feta
- 3 shallots chopped
- 3 garlic cloves, finely chopped
- 2 pints of cherry tomatoes
- 1 tablespoons extra virgin olive oil
- 2 teaspoons oregano
- ½ teaspoon red pepper flakes
Pasta Ingredients
- 1 box pasta
- 3 large handfuls of chopped arugula
Garnish
- red pepper flakes
- fresh basil leaves, torn
Step 1: Instructions for the Tomato-Feta Bake
Preheat oven to 400°.
In a large ovenproof skillet or medium baking dish, combine tomatoes, shallot, garlic, and olive oil. Season with salt and red pepper flakes and toss to combine.
Place feta into center of tomato mixture and drizzle top with remaining olive oil. Scatter oregano over tomatoes. Bake for 40 to 45 minutes, until tomatoes are bursting and feta is golden on top.
Step 2: Instructions for Pasta
In a large pot of salted boiling water, cook pasta according to package instructions. Reserve ½ cup pasta water before draining.
Step 3: Instructions to Assemble
With a fork, mash the tomatoes and stir to combine feta. Add the tomato mixture and chopped arugula to the pot with drained pasta. Mix to combine, gradually add reserved pasta water until your pasta and sauce looks well combined. Ladle into bowls and serve immediately, Enjoy!
